16세기 이탈리아 궁정 연회의 구성원들
본 글의 목적은 유럽의 연회에 대해 연구하고자 하는 계획 아래 16세기 이탈리아에서 발견되는 문헌들을 통해 당대 이탈리아 궁정의 식생활 영역에 종사했던 다양한 직능의 구성원들을 살펴보는 것이다. 16세기에 접어들며 이탈리아의 궁정에서는 다양한 직능들이 등장해 점차 전문성을 발전시키며 당대 궁정의 식생활을 주도했다. 이들 직능에 종사했던 사람들 중 새로운 시대의 지식인이라고 할 수 있을 자들이 인쇄술 발전의 배경 아래에서 이러한 직능에 대한 기록들을 남겼고 이를 통해 이러한 직능의 모습과 활동을 재구성할 수 있게 되었다. 연회총괄관리인(Scalco), 요리담당(Cuoco), 식기류 및 차가운 요리담당(Credenziere), 썰기담당(Trinciante) 및 음료담당(Coppiere)과 포도주관리인(Bottigliere)들이 이러한 직능들인데, 이들은 궁정 내에서 시종들의 보조를 받아가며 각기 세분화된 자신의 업무를 담당했다. 이러한 직능들의 활동 속에서 군주는 궁정 내에서 연회를 개최할 수 있었다.
Staff of the 16th Century Italian Banquet
The purpose of this article is to examine the various workers in the Italian court through the literature printed in Italy in the 16th century, under the plan to study the banquets in Europe. In the 16th century, various workers appeared in the courts of Italy. Gradually developing their own professionalism, these workers led the food culture of the courts of the time. Among them, those who could be considered as intellectuals of the new era have published the records of themselves(Banquet Staff). It is possible to reconstruct each one's activities thanks to those records: Scalco, Cuoco, Credenziere, Trinciante, Coppiere and Bottigliere. They conducted their own tasks with the servants in the courts. Through the activities of these staff members, the Italian princes could hold a banquet within the court.
